<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">I went with 25 because <span style="font-family: Georgia, 'Times New Roman', serif;">my husband <span style="font-family: Georgia, 'Times New Roman', serif;">work<span style="font-family: Georgia, 'Times New Roman', serif;">s overnight at least on<span style="font-family: Georgia, 'Times New Roman', serif;">e evening a <span style="font-family: Georgia, 'Times New Roman', serif;">week</span></span></span></span></span> and I just make something simple for my daughter and I. This also takes into account having leftovers since some of these recipes make large portions. I figure that if I plan to prepare 5 home cooked dinners a week with 25 different choices we won't repeat the same meals for five weeks! </span><br />

I am hoping that this post will help other busy families out there and will give you some new dinner time inspiration! </span><span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">You'll notice we don't eat a ton of red meat. We mostly go with chicken, turkey or meatless meals. I threw in a couple beef and pork meals for my husband! Slice the zucchini into 1/4 inch thick rounds. In a medium bowl combine the Parmesan, bread crumbs, salt and a few turns of pepper. Dip each zucchini slice individually into the olive oil and then into the Parmesan mixture, coating it evenly on both sides. Place in a single layer on the prepared basking sheets. </span><br />

It really incorporates all the yummy flavors you expect of buffalo chicken - the heat from hot sauce, nice chunks of chicken and to cool things off some goat cheese. Blue cheese would also be a great substitute if you don't like goat cheese and my friend Julie, who came over and ate this dinner with us said that slices of celery in it would also be a yummy addition and I agree. I am not sure it's the healthiest of quinoa recipes (loads of cheddar cheese) but it sure is delicious. </span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Preheat broiler. Cook quinoa according to package directions and set aside. SEason chicken breasts on both sides with garlic powder, onion powder, salt, pepper and smoked paprika. Cook in a nonstick pan sprayed with cooking oil over medium heat until cooked all the way through. Chop into bite sized pieces. </span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Whisk together flour and 1/2 cup of milk in a separate large pan over medium heat. Pour in the remaining milk and green onions. Using a spatula bring the mixture to a boil, stirring constantly. Cook for one minute while boiling. </span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Remove from the heat and add in the hot sauce and cheddar cheese. Stir until the cheese is completely melted. Add in the quinoa and chicken and stir to combine. </span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Pour into a non stick spayed casserole dish and top with the chevre. Broil for 5 minutes or until the cheese is golden and the sauce is bubbly. </span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">In the bowl of a stand mixer combine the egg, butter and sugars beat on medium high speed until well creamed about five minutes. If using a hand mixer beat for at least 7 minutes. Add the yogurt and vanilla and incorporate until fluffy again, about 2 minutes. Scrape down the sides of the bowl and add in the flour, cinnamon, cream of tartar, baking soda and optional salt. Beat until just combined, about 2 minutes. Be careful not to over mix. </span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Stir in the cinnamon chips. Place dough in the refrigerator for about 1 hour, until it is hard to the touch. Preheat oven to 350 degrees and line a baking sheet with a Silpat liner or parchment paper or spray with cooking spray. Roll dough into 1 inch balls and place 2 inches apart on the baking sheet. Bake for 8 minutes or until edges have set and tops are just beginning to brown. Allow cookies to cool on a baking sheet for 5 minutes before removing and transferring to a rack to finish cooling. </span><br />

I adapted this recipe from my Betty Crocker cookbook chocolate chip cookie recipe and was really happy with the results. They were really yummy and who doesn't love an M&M cookie? </span><br />

My neighbor AnnMarie and her family just moved from Okinawa and gave me a bunch of canned pumpkin. I asked her how she used pumpkin and she shared with me this amazing recipe. I am so thankful she did because it was seriously delicious. You can't go wrong with the flavor combinations in this one pot meal - pumpkin, curry, coconut milk, red onion, cinnamon, cilantro, cashews. I added in carrots for additional flavor and veggie content and this dish could easily be adapted for vegetarians if you substituted more veggies for the chicken. After I made it I put it in my crock pot to hang out on warm for several hours and I think it really intensified the flavors.</span><br />

Place on paper towels on a plate to absorb some of the drippings. In the pot of your crock pot place the sausage, cubed Velveeta, cream cheese and can of Rotel. Turn the crock pot on high and in about half an hour stir to combine ingredients. Stir again in another half hour and everything should be melted together. Turn crock pot to warm setting until ready to serve. </span><br />

Add in the bay leaf. Turn on the crock pot to low and cook for 3-4 hours. Set aside. Pour the juices from the pot through a mesh sieve into a saucepan. Press the garlic through the mesh sieve, scraping it off to form a paste. Cook with a tablespoon of butter over medium-high heat until slightly thickened and serve over the chicken and whatever else you happen to be eating (cooked vegetables, potatoes, crusty bread, etc). I had never made them before and really have only had them a couple times, but for some reason I got it in my head to make them a couple of weeks ago. I sent them in to work with my husband and when I asked how his co-workers liked them he told me that one lady said, "I love your wife!" And that makes it all worth it, knowing someone else enjoyed these tasty treats. They are fairly simple to make but plan ahead because they have to cool for TWO HOURS!</span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Adjust an oven rack to the lower-middle position and preheat oven to 350 degrees. Line a 9X13 pan with two overlapping pieces of foil or parchment paper, leaving overhand to act as handles for lifting the bars out of the pan. Spray with non-stick cooking spray. </span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Spread the coconut on a baking sheet and bake until the outer flakes begin to brown, about 4 minutes (keep a very close eye on it!). Set aside to cool.</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Melt the butter and combine with the graham cracker crumbs in a small bowl. Toss with your fingers until the butter is evenly distributed. Press the crumbs evenly into the bottom of the prepared pan to form your first layer. </span><br />

Jody has shared several delicious recipes with me via email that I kept in a folder and recently I went back through them and decided it was time to finally make these. It contains flavors that my husband and I love and best of all is meatless! I am always on the hunt for good vegetarian recipes. We both gobbled these up, enjoying the southwestern flavors and all the vegetable goodness. It's a very filling, satisfying dinner that doesn't take much time or effort besides chopping. It is a a type of stir fry with ramen style noodles and a sweet thick sauce that is very popular here in Okinawa. It's at basically every festival on the island, which is where we usually eat it. I decided I need to try making it at home in our final months here, while I can still get the noodles easily and while I still remember the taste. </span><br />

It's one of those dishes that everyone has their own take on. I wanted to try it with shrimp but traditionally pork or chicken is used. I did stay true to the vegetable combination though, using cabbage, carrots, onion, and green onion as a garnish. </span><br />

Line two cookie sheets with Silpat liners, parchment paper, or spray with cooking spray. In a large mixing bowl beat together Crisco, sugars, egg, water and vanilla until batter is creamy. Add in the cinnamon, salt, baking soda and flour and mix until just combined. Fold in the peanut butter chips. Refrigerate dough for 30 minutes. Do not skip this part if you want puffy cookies!</span></div>

I wanted to find one that incorporated oatmeal because oats and blueberries and just so delicious together. In a third bowl combine whole wheat flour, salt, baking powder, baking soda and whisk to combine. Combine oats/milk mixture with sugar/apple sauce mixture and mix will. Slowly add in the dry ingredients and mix until just incorporated. Fold in the blueberries, saving a couple to place on top. </span><br />

It has a dark green skin and is much smaller than the squash we are used to as Americans. The flesh is a beautiful dark yellow and becomes sweet and fluffy when cooked. It is loaded with carotene and vitamin A. Often when we dine out in local restaurants it comes on a tempura vegetable plate. I decided to try making it at home after I saw this lovely Kabocha squash at the grocery store a couple weeks ago.</span><br />

There are tons of recipes for layered butter pecan cake, but since I wanted to take them into work for his coworkers to enjoy I really thought cupcakes were the way to go. Although this a great cake recipe and the toasted pecans were a tasty touch, I was not a fan of the frosting. I think there was too much powdered sugar and modified the recipe below.
