Meatless Mondays: Mozzarella, Tomato and Avocado Salad

Meatless Mondays do not get much better than this, my friends. I dare you to find a more fresh, delicious salad than this one from Val So Cal. The instant I saw it I fell in love. But then I made it and had a bite and I was done for. These flavors are just perfect together - juicy, crisp cherry tomatoes, soft creamy mozzarella, rich avocado, fresh parsley and basil, lemon juice and olive oil. Serve it with a warm, toasted baguette and you'll be done for too!

Mozzarella, Tomato and Avocado Salad
Ingredients
1 container cherry tomatoes, cut in half
1 carton fresh mozzarella cheese pearls, drained
1 avocado, peeled and diced
1/3 cup basil, julienned (I used my frozen basil I had on hand, it was perfection)
2 tablespoons fresh parsley
1/4 cup lemon juice
1/4 cup olive oil
salt and pepper to taste
Baguette - optional

Directions
In a large bowl combine the tomatoes, mozzarella, basil and parsley. Set aside.

In a small bowl whisk the lemon juice, oil, salt, and pepper.

Pour over tomato mixture. Toss to coat. Cover and refrigerate for 1 hour before serving.

Just before serving stir in the chopped avocado.

Serve with a slotted spoon and toasted baguette.

  2. I know this is supposed to be a meatless Monday recipe, but I made it on a Saturday and it was just perfect. The avocados keep you full for hours and provides the right kind of fat. Thank you so much for posting!

    1. trader joe's has frozen basil just as pictured. they also have crushed garlic and cilantro in the mini cube form which is equivalent to a teaspoon.

  4. Oh wow...I was looking for a recipe that had avocados and this came up in my search...This looks really good and not too hard to make...I think I am going to try it soon and see how mine comes out...

  5. I made this for my holiday brunch (perfect since it's red and green!) and it was a huge hit! I did add in some cold pasta to stretch the recipe a little bit, and it turned out great.

    So yummy & healthy and I will be making again!

  8. variation idea: add shrimp, fine sliced red onion, and misc peppers, skip the cheese. The juice from a couple limes make up the "dressing". (doesn't make this "meatless" but it is very tasty

  20. Also, I agree it's a nice side dish to fish and a starch. Or adding shrimp as one person suggested. It's a bit heavy as a standalone.
